Know Your Heat
Why is a chili pepper spicy?
Chili peppers contain capsaicin. This substance stimulates the heat receptors in your mouth and causes that characteristic burning sensation. Most of the capsaicin is found in the white seeds on the inside of the chili pepper.

How do you make a dish less spicy?
Did you get a little too enthusiastic? Add extra ingredients to tone down the heat. Yogurt, cream, or coconut milk work especially well because capsaicin dissolves in fat.
Cool Down
How do you use chili peppers in the kitchen?
Raw, fried, grilled, roasted, or used in a sauce: chili peppers are incredibly versatile. Start with a small amount and add more to taste.
